You increase the productivity of convenience stores by becoming the sort of place where they have to lock everything behind glass cases so immigrants can't steal, then pay an immigrant clerk to come and unlock the items from behind the glass case.

A huge piece of the puzzle is public schooling. If an immigrant moves to NYC they receive $36k per child per year in public schooling. How much tax does that immigrant nail salon worker pay towards their kids schooling, not much.

That isn't reported as "welfare", but that's what it it.

Caplan and Hanania really seem to like Middle Eastern-style indentured labor. I guess immigration is more successful when you don't freely give permanent residency or citizenship to foreigners.

Right, their proposal could work in a despotic state that makes it almost impossible to acquire citizenship and foreign workers are basically cannon fodder. Of course, they would never endorse such a form of political governance for Western countries.
